Potato Salad With Sun-Dried Tomatoes Recipe

Ingredients
- 2 tbsp olive oil
- 1 1/2 lb small new red potatoes
- 1/3 cup chopped sun-dried tomatoes, drained
- 3 tbsp balsamic vinegar
- 3 tbsp chopped green onions
- 1 tbsp Table Blend
Directions
- Cook potatoes in large pot of boiling water 12 to 15 minutes until tender when pierced with a fork.
- Drain and rinse potatoes in cold running water.
- Meanwhile, combine sun-dried tomatoes, vinegar, olive oil and Table Blend in small bowl; mix well.
- Combine potatoes and green onions in large bowl.
- Add dressing and toss to coat.
- Refrigerate until ready to serve.
