Garlic Mushroom Pasta with Pork Tenderloin

- 1 lb Coleman® Boneless Pork Tenderloin, sliced into 1-inch medallions
- 1 tbsp olive oil
- 1 tbsp Dash™ Garlic & Herb Seasoning Blend
- 8 oz penne pasta
- 1 tbsp butter
- 10 oz cremini mushrooms, sliced
- 3 garlic cloves, minced
- ½ cup low-sodium chicken broth
- ¾ cup heavy cream
- ½ cup grated parmesan
- 1 tsp Dash™ Garlic & Herb Seasoning Blend
- Chopped parsley and thyme, for garnish
Directions
- Season Coleman® Boneless Pork Tenderloin with Dash™ Garlic & Herb Seasoning Blend. In a skillet over medium heat, sear pork in olive oil until golden and cooked through, about 3–4 minutes per side. Remove and set aside.
- Cook penne until al dente, then drain and set aside.
- Cook penne until al dente, then drain and set aside. In the same skillet, melt butter and sauté mushrooms until browned, about 5–7 minutes. Add garlic and cook 1 minute more.
- Pour in broth and heavy cream, bring to a simmer, then stir in parmesan. Let sauce thicken slightly.
- Add pasta and pork back into the skillet. Toss to coat, simmer 1–2 minutes, season with more Dash™ Garlic & Herb Seasoning Blend. Plate then garnish with chopped parsley and thyme before serving.
