Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/3 cup sugar
  • 2 eggs
  • 1 cup cream-style corn
  • 1 tbsp canned green chiles, drained and chopped
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 2 tsp baking powder
  • 1 tbsp Dash™ Southwest Chipotle Seasoning Blend

Smoky and sweet, this recipe is one to add to your cookbook. Traditional cornbread gets a kick with the addition of Dash™ Southwest Chipotle Seasoning Blend.

Directions

  1. Preheat oven to 325°F.
  2. Lightly greased 8- x 8-inch baking pan.
  3. In a bowl with and electric hand mixer combine butter and sugar.
  4. Add eggs one at a time, beating after each addition.
  5. Using a ruber spatula fold in creamed corn, chiles and cheese.
  6. In a separate bowl whisk together flour, cornmeal, baking powder and Dash™ Southwest Chipotle Seasoning.
  7. Add flour mixture to corn mixture; stir until smooth.
  8. Pour batter into prepared baking pan.
  9. Bake for 40 to 45 minutes, until a toothpick inserted in center of the bread comes out clean.
  10. Cut into 16 squares and serve warm.

Tips

  • Chef’s Tip - Instead of slathering the cornbread with butter, brush the corn with a mixture of olive oil, lime juice, and Dash™ Southwest Chipotle Seasoning Blend.
