Chipotle Cornbread

- 1/2 cup unsalted butter, softened
- 1/3 cup sugar
- 2 eggs
- 1 cup cream-style corn
- 1 tbsp canned green chiles, drained and chopped
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 2 tsp baking powder
- 1 tbsp Dash™ Southwest Chipotle Seasoning Blend
Smoky and sweet, this recipe is one to add to your cookbook. Traditional cornbread gets a kick with the addition of Dash™ Southwest Chipotle Seasoning Blend.
Directions
- Preheat oven to 325°F.
- Lightly greased 8- x 8-inch baking pan.
- In a bowl with and electric hand mixer combine butter and sugar.
- Add eggs one at a time, beating after each addition.
- Using a ruber spatula fold in creamed corn, chiles and cheese.
- In a separate bowl whisk together flour, cornmeal, baking powder and Dash™ Southwest Chipotle Seasoning.
- Add flour mixture to corn mixture; stir until smooth.
- Pour batter into prepared baking pan.
- Bake for 40 to 45 minutes, until a toothpick inserted in center of the bread comes out clean.
- Cut into 16 squares and serve warm.
Tips
- Chef’s Tip - Instead of slathering the cornbread with butter, brush the corn with a mixture of olive oil, lime juice, and Dash™ Southwest Chipotle Seasoning Blend.
