Everything Salmon Bites with Crispy Potatoes

Ingredients

  • Everything salmon bites
  • 1 ½ lbs salmon, skin removed
  • 1 tbsp mayo of choice
  • 1 tbsp dijon mustard
  • 2 tbsp Dash™ Everything But The Salt Seasoning Blend
  • 1 tbsp Dash™ Table Blend
  • 1 tbsp olive oil
  • Lemon juice, to top
  • Crispy potatoes:
  • 2 russet potatoes
  • 1 ½ tbsp Dash™ Table Blend
  • 3 tbsp olive oil
  • Fresh parsley to top
  • Lemon yogurt dip:
  • ½ cup greek yogurt
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tbsp chopped parsley
  • 1-2 tbsp water to thin

Created by @somethingnutritious – These everything crusted salmon bites are such a delicious way to switch up your fish game! They’re coated in a simple crust made of almond flour and everything seasoning, and baked until golden brown.

Directions

  1. Preheat the oven to 400°F
  2. Slice the potatoes into rounds and then in half.
  3. Toss them in a bowl with the olive oil and Dash™ Table Seasoning Blend
  4. Add them to a parchment lined sheet pan and bake them for 35 minutes.
  5. While that bakes, cut the salmon into 1” cubes.
  6. Add the salmon to a bowl with the mayo and mustard and mix well
  7. Coat in the Dash™ Everything But The Salt Seasoning Blend and Dash™ Table Blend
  8. After 35 minutes, remove the potatoes from the oven and give them a toss
  9. Add the salmon cubes to the sheet pan with the potatoes then drizzle the salmon with about 1 tbsp of olive oil
  10. Bake for an additional 10-12 minutes
  11. While that bakes, combine the yogurt ingredients in bowl and whisk together until smooth
  12. Once the salmon and potatoes are done, top them with freshly squeezed lemon, chopped parsley and enjoy!
