- 4 ears corn, shucked, cleaned and cut into half
- ¼ cup unsalted butter, melted
- 2 tbsp Dash™ Taco Seasoning Mix
- 1 tsp lime juice
- ¼ cup cotija cheese
Tender boiled corn tossed in a zesty lime-butter sauce spiked with Dash™ Taco Seasoning, then finished with a sprinkle of crumbly cotija cheese. This dish combines bright, savory, and tangy flavors for a fresh and delicious side
Directions
- Heat a pot of water over medium-high heat until it comes to a rolling boil. Gently add the corn to the pot and bring the water back to a boil.
- Reduce the heat to maintain a gentle boil and cook the corn for 4-5 minutes, or until the kernels turn bright yellow and tender.
- Carefully remove the corn from the water and let it drain completely. Transfer the corn to a serving bowl.
- In a separate bowl, whisk together the melted butter, Dash™ Taco Seasoning, and lime juice until well combined.
- Pour the lime butter over the hot corn. Using tongs, toss the corn until all pieces are evenly coated.
- Sprinkle cotija cheese generously over the corn and serve immediately.
Tips
- Chef’s Tip - To elevate the flavor, grill the corn for a few minutes after boiling to get a slight char. This adds a smoky taste that pairs perfectly with the lime butter and cotija cheese.
