Ingredients

  • 4 ears corn, shucked, cleaned and cut into half
  • ¼ cup unsalted butter, melted
  • 2 tbsp Dash™ Taco Seasoning Mix
  • 1 tsp lime juice
  • ¼ cup cotija cheese

Directions

  1. Heat a pot of water over medium-high heat until it comes to a rolling boil. Gently add the corn to the pot and bring the water back to a boil.
  2. Reduce the heat to maintain a gentle boil and cook the corn for 4-5 minutes, or until the kernels turn bright yellow and tender.
  3. Carefully remove the corn from the water and let it drain completely. Transfer the corn to a serving bowl.
  4. In a separate bowl, whisk together the melted butter, Dash™ Taco Seasoning, and lime juice until well combined.
  5. Pour the lime butter over the hot corn. Using tongs, toss the corn until all pieces are evenly coated.
  6. Sprinkle cotija cheese generously over the corn and serve immediately.

Tips

  • Chef’s Tip - To elevate the flavor, grill the corn for a few minutes after boiling to get a slight char. This adds a smoky taste that pairs perfectly with the lime butter and cotija cheese.
