Chipotle Baja Steak Tostada

- 1 tbsp Dash™ Southwest Chipotle Seasoning Blend
- 2 tbsp vegetable oil (divided), plus more for frying
- 2 tbsp lime juice, divided
- 1 lb flat iron steak
- 1 cup rinsed and drained black beans
- 1 cup corn
- 8 each 5-inch yellow corn tortillas
- 1 each Avocado, sliced
- 1 cup lettuce, shredded
- 4 springs Fresh cilantro, picked
A robust steak marinade featuring Dash™ Southwest Chipotle Seasoning Blend is the secret to these zesty Tex-Mex tostadas.
Directions
- In a bowl whisk together 1 tbsp. Dash™ Southwest Chipotle Seasoning with, 1 tbsp. oil, and 1 tbsp. lime juice. Brush the marinate on both sides of steak and Marinade in refrigerator 3 hours or overnight.
- In a bowl combine beans, corn, 1 tbsp. Dash™ Southwest Chipotle Seasoning, 1 tbsp. oil and 1 tbsp. lime juice. Refrigerate until ready to use.
- In a pan over medium-high heat add 1 inch of vegetable oil heat oil to 350°F
- Fry one tortilla at a time, for 1 to 2 minutes, turning once, until tortillas are crisp and golden. Drain tortillas on paper towels.
- Pre-heat grill or broiler and cook steak to desired doneness.
- Slice steak and serve on tortillas with bean and corn mixture.
- Top with avocado, lettuce and cilantro, if desired.
