Southwest Chopped Salad

- 1 lb chicken breast, boneless-skinless
- 2 tsp Dash® Original Salt-Free Seasoning
- 1 tbsp olive oil
- 2 cups romaine lettuce, chopped
- 1 cup red bell pepper, diced
- ½ cup black beans, drained and rinsed
- 1 avocado, diced
- ½ cup canned corn, drained
- ½ cup cilantro, chopped - plus more for garnish
- ½ cup tortilla chips, crushed - plus more for garnish
- 1 cup Mexican cheese, shredded
- Salad Dressing
- 1 cup sour cream
- ¼ cup lime juice
- 4 tbsp hot sauce
- 1 tbsp Dash® Original Salt-Free Seasoning
Directions
- Cook Chicken - Preheat a grill pan over medium-high heat. Rub chicken with Dash® Original Salt-Free Seasoning and olive oil. Grill for 5-6 minutes per side, or until fully cooked. Remove from heat and let cool, then chop into bite-sized pieces.
- Salad Dressing - In a small bowl, whisk together sour cream, lime juice, hot sauce, and Dash®️ Original Seasoning until smooth.
- Assemble Salad - In a large bowl, combine romaine, bell pepper, black beans, corn, cilantro, tortilla chips, cheese, and diced chicken. Drizzle with dressing and toss until evenly coated.
- Garnish & Serve - Top with additional crushed tortilla chips and cilantro. Serve immediately.
