Ingredients

  • 2 each Chicken Breast, boneless & skinless
  • 2 tbsp. Dash™ Salt-Free Original Seasoning
  • 2 tbsp. olive oil
  • 1 cup brown rice, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup tomato, diced
  • 1 cup mixed greens
  • 1 avocado, peeled and sliced
  • ¼ cup cheddar cheese, shredded
  • ¼ cup salsa, prepared
  • 1 each lime, wedges
  • 4 sprigs cilantro

Directions

  1. Season chicken on both sides with Dash™ Salt-Free Original Seasoning.
  2. Heat pan with oil over medium heat add chicken cook for 6-7 minutes on each side, until fully cooked. Once done, let the chicken rest for 5 minutes, then slice into thin strips.
  3. Place cooked brown rice each bowl, add black beans, corn, diced tomatoes, avocado slices, shredded lettuce, and chicken slices.
  4. Sprinkle with shredded cheese if desired.
  5. Top with salsa, a squeeze of lime juice, and garnish with fresh cilantro.
