Mexican Rice Recipe
A staple for any Mexican entree. Steamy, hot and full of spice, this rice dish is accented with Dash™, lime juice, chopped peppers and onion for a truly authentic taste.

Ingredients
- 2 tbsp olive oil
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 1 tbsp Extra Spicy Seasoning Blend
- 2 cup reduced-fat, sodium-free chicken broth
- 3/4 cup uncooked long-grain rice
- 1 tbsp lime juice
- 1 cup seeded and chopped tomato
Directions
- Heat oil in large saucepan.
- Add onion and sauté about 2 minutes.
- Add rice and cook 2 additional minutes.
- Add broth, Extra Spicy Seasoning Blend and lime juice; mix well.
- Simmer, covered, 15 minutes.
- Add tomatoes and green pepper.
- Simmer an additional 5 minutes or until rice is tender and all liquid is absorbed.
