Ingredients

  • 2 tbsp olive oil
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1 tbsp Extra Spicy Seasoning Blend
  • 2 cup reduced-fat, sodium-free chicken broth
  • 3/4 cup uncooked long-grain rice
  • 1 tbsp lime juice
  • 1 cup seeded and chopped tomato

Directions

  1. Heat oil in large saucepan.
  2. Add onion and sauté about 2 minutes.
  3. Add rice and cook 2 additional minutes.
  4. Add broth, Extra Spicy Seasoning Blend and lime juice; mix well.
  5. Simmer, covered, 15 minutes.
  6. Add tomatoes and green pepper.
  7. Simmer an additional 5 minutes or until rice is tender and all liquid is absorbed.
