  1. Heat oven to 400 degrees.
  2. Heat 1 tablespoon olive oil in a 2-quart saucepan.
  3. Add eggplant and cook 3 minutes.
  4. Add tomatoes, pepper, onion, vinegar and Tomato Basil Garlic Seasoning Blend to saucepan.
  5. Bring mixture to a boil, then reduce to simmer for 10 minutes.
  6. Stir in olives.
  7. Brush halibut with remaining olive oil.
  8. Sprinkle Garlic & Herb Seasoning Blend over both sides of halibut.
  9. Place steaks in a 13- x 9- x 2-inch glass baking dish in a single layer.
  10. Spoon tomato mixture over fish.
  11. Bake in 400-degree oven for 20 to 25 minutes or until fish flakes easily.
  12. Arrange halibut on large platter.
  13. Spoon vegetables and sauce over halibut.
  14. Garnish with fresh basil as desired.
  15. Serve immediately.
