Ingredients

  • Cajun Chicken:
  • 1½ lbs boneless, skinless chicken thighs
  • 2 tbsp oil
  • 2 tbsp DASH Salt-Free Cajun Seasoning
  • 3 tbsp Lime Juice
  • Creamy Cajun Slaw:
  • 3 cups coleslaw mix
  • ½ cup mayonnaise
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp DASH Salt-Free Cajun Seasoning
  • For Serving:
  • 8 small flour or corn tortillas

Juicy Cajun-spiced chicken paired with a cool, creamy Cajun lime slaw for the perfect balance of heat, crunch, and brightness. This version adds more visual appeal and flavor impact for social and menu use.

Directions

  1. Season the chicken. Pat chicken thighs dry. Toss with oil, DASH Salt-Free Cajun Seasoning and lime juice until evenly coated.
  2. Cook the chicken. Heat a skillet, grill, or flattop over medium-high heat. Cook chicken 4–5 minutes per side until charred and cooked through (165°F internal temperature).
  3. Rest and chop. Let the chicken rest for 3 minutes, then chop into small taco-size pieces.
  4. Make the creamy Cajun slaw. In a bowl, combine coleslaw mix, mayonnaise, lime juice, cilantro, and DASH Salt-Free Cajun Seasoning. Toss until evenly coated. Chill or rest for 5–10 minutes to let flavors blend.
  5. Warm the tortillas. Heat tortillas on a skillet or flattop for 20–30 seconds per side.
  6. Build the tacos. Add chopped Cajun chicken to each tortilla and top generously with creamy Cajun slaw. Serve immediately.
