Pasta Salad Recipe

Ingredients
- 1 16oz box rotini pasta
- 1 bunch asparagus
- 1 ½ tsp Dash Lemon Pepper seasoning
- 1 12oz jar artichoke hearts, quartered
For the Dressing
- ¼ cup olive oil
- Juice from 2 lemons
- 2 tbsp Dijon mustard
- 1 tbsp Dash Lemon Pepper seasoning
Directions
- Bring a large pot with water to a boil and add rotini. Cook until al dente according to box instructions.
- While the pasta is cooking, cut the woody ends off the asparagus and cut remaining asparagus into thirds. Add to a pan with oil over medium heat and sauté with Dash Lemon Pepper seasoning until the asparagus just starts to brown. Then remove from heat and set aside.
- In a small bowl, combine olive oil, lemon juice, Dijon mustard and Dash Lemon Pepper seasoning and mix until well combined.
- In a large glass bowl, combine al dente pasta, sauteed asparagus, and artichoke hearts. Drizzle desired amount of dressing over the top and mix until coated.
