Asparagus and Rotini Pasta Salad

- 1 16oz box rotini pasta
- 1 bunch asparagus
- 1 tsp Dash™ Lemon Pepper Seasoning Blend
- 1 12oz jar artichoke hearts, quartered
- For the Dressing
- ¼ cup olive oil
- Juice from 2 lemons
- 2 tbsp Dijon mustard
- 1 tbsp Dash™ Lemon Pepper Seasoning Blend
A refreshing pasta salad with tender rotini, sautéed asparagus, and artichoke hearts, all tossed in a zesty Dash™ Salt-Free lemon Pepper Seasoned Dijon dressing for a light and flavorful dish.
Directions
- Bring a pot of water to a boil. Add the rotini pasta and cook until al dente, following the instructions on the package. Drain and set aside.
- While the pasta is cooking, trim the woody ends off the asparagus and cut the remaining stalks into thirds.
- In a pan, heat a little oil over medium heat. Add the asparagus and sauté with 1 tsp Dash™ Lemon Pepper Seasoning Blend until the asparagus just begins to brown. Remove from heat and set aside.
- In a whisk together olive oil, lemon juice, Dijon mustard, and 1 tbsp Dash™ Lemon Pepper Seasoning Blend until well combined.
- In a bowl, combine the cooked pasta, sautéed asparagus, and artichoke hearts. Drizzle the dressing over the top and toss until everything is evenly coated.
Tips
- Chef’s Tip -After cooking the pasta, rinse it briefly under cold water to stop the cooking process and keep it from becoming mushy. This also helps the pasta stay firm and refreshing in the salad.
