Ingredients

  • 1 iceberg lettuce head
  • 1 lb turkey, ground
  • 2 tbsp Dash™ Garlic & Herb Seasoning Blend
  • 1 tbsp olive oil
  • 1/2 cup red pepper, thinly sliced
  • 1/2 cup onion, thinly sliced
  • 1 cup black beans, drained
  • 1 cup corn frozen, defrosted and drained
  • 1 cup tomato sauce
  • 1 cup fat-free sour cream

This low-carb recipe is a quick and easy appetizer or lunch idea. Season with Dash™ for foolproof flavor.

Directions

  1. Remove the core of the iceberg lettuce and rinse the head under cold water. Shake off any excess water. Cut the head in half and gently separate the leaves. Pat them dry with paper towels and set aside for assembly.
  2. Heat a sauté pan over medium-high heat. Add the ground turkey and brown it, seasoning with Dash™ Garlic & Herb Seasoning . Remove the cooked turkey from the pan and set aside.
  3. Return the pan to the burner and heat the olive oil. Add the red pepper and onions, sautéing for 2 minutes until they start to soften.
  4. Add the cooked ground turkey back to pan, along with the black beans, corn, and tomato sauce.
  5. Cook everything together for an additional 2 minutes until heated through.
  6. To serve, place a scoop of the turkey mixture in the center of each lettuce cup. Top with a dollop of sour cream. Be careful not to overfill the lettuce cups.

Tips

  • Chef’s Tip - For extra crisp and refreshing lettuce cups, chill the separated leaves in ice water for 5-10 minutes before drying. This helps them stay firm and crunchy when filled.
