Creamy Cauliflower “Mac” and Cheese

- 1 each cauliflower head, cut into bite-sized pieces
- Crisco® Cooking Spray
- 1 cup low-fat milk
- 4 tsp. Dash™ Onion & Herb Seasoning Blend
- ¼ cup cream cheese, reduced fat
- 1 ½ cup Gruyère cheese, shredded, divided
- ½ cup parmesan cheese, shredded
Transform cauliflower into a crave-worthy, delicious dish with this easy recipe! Cauliflower florets are blended with rich Gruyère and Parmesan cheeses for a guilt-free twist on classic mac & cheese—offering all the comfort without the carbs or sodium!
Directions
- Preheat oven 375°F.
- Fill a pot with water and heat on medium-high heat and bring to a boil. Add cauliflower cook for about 5-7 minutes. Drain well and pat cauliflower dry.
- Spray an 8x 8 baking dish with oil and transfer cauliflower to baking dish.
- In a saucepan over medium heat add milk and bring to simmer. Whisk in cream cheese Dash™ Salt Free Onion & Herb seasoning and whisk until smooth. Remove from heat and whisk in 1 cup gruyere cheese until smooth.
- Pour cheese sauce over the cauliflower and top with ½ cup gruyère cheese and parmesan cheese. Bake until brown and bubbly, about 15 minutes. Sprinkle with additional Dash seasoning before serving.
