Turkey Burrito With Black Bean, Cilantro & Lime

Ingredients

  • 1 lb Southwest vegetable mix frozen (peppers, corn, black beans)
  • 1 tbsp Dash™ Fiesta Lime Seasoning Blend
  • 1 cup iceberg lettuce, shredded
  • 1 red onion, disced
  • 1/4 cup fresh cilantro, coarsely chopped
  • 1/2 cup mozzarella low fat, shredded
  • 4 each tortillas 6-inch, warm
  • 1/4 cup sour cream low-fat
  • 8 oz turkey deli meat low sodium, thinly sliced
  • 1 lime, cut into wedges

Need a quick and easy Mexican dish? Sprinkle Dash™ Fiesta Lime Seasoning Blend on veggies and turkey to turn up the heat. Finish by squeezing fresh lime wedges over the dish before serving.

Directions

  1. Thaw the Southwest vegetable mix in the refrigerator. Once thawed, drain any excess liquid and pat the vegetables dry with paper towels.
  2. In a bowl combine the thawed vegetables with Dash™ Fiesta Lime Seasoning, lettuce, red onion, cilantro, and shredded mozzarella. Toss until everything is evenly coated.
  3. Warm each tortilla and spread a thin layer of sour cream over the surface.
  4. Evenly distribute the sliced turkey onto each prepared tortilla, then top with an equal amount of the seasoned vegetable mix.
  5. Roll each tortilla tightly into a burrito. Cut in half, if desired, and serve with lime wedges on the side for an extra burst of zesty flavor.

Tips

  • Chef’s Tip -Lightly warm the tortillas in a dry skillet for a few seconds on each side before assembling. This not only makes the tortillas more pliable and easier to roll, but it also adds a slightly toasty flavor.
