Ingredients

  • 1 1/2 tsp Dash™ Salt-Free Original Seasoning Blend
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • ½ tsp ground black pepper
  • 1 5-lb beef chuck roast
  • 2 tbsp olive oil
  • 2 each onions, sliced ½ inch
  • 1/2 cup red wine vinegar
  • 1/2 cup brown sugar
  • 1 tbsp garlic clove, minced
  • 1 each bay leaf
  • 12 each red potatoes

It’s as simple as adding the ingredients and letting them simmer all day. Brown sugar, nutmeg and Dash™ Salt-Free Original Seasoning Blend season the pot roast as it slow cooks, making it tender and juicy just in time for dinner.

Directions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine Dash™ Salt-Free Original Seasoning, cinnamon, nutmeg, ginger, and pepper. Mix well.
  3. Rub the seasoning mixture evenly over the entire surface of the roast.
  4. In a Dutch oven, heat the oil over medium-high heat. Add the seasoned roast and brown it on all sides. Drain any excess fat.
  5. Place the sliced onions over the browned roast, and arrange the potatoes around it.
  6. In a bowl, combine the brown sugar, wine vinegar, minced garlic, and bay leaves. Stir until well mixed, then pour the sauce over the roast and vegetables.
  7. Cover the Dutch oven with a tight-fitting lid and cook in the preheated oven for 2 to 2 1/2 hours, or until the roast is tender.

Tips

  • Chef’s Tip -For even more flavor and tenderness, marinate the roast in the seasoning mixture and a little olive oil for a few hours or overnight before cooking. This helps the spices penetrate deeper and enhances the overall taste of the roast.
