- 2 each russet potatoes, medium-large
- 2 each scallion, chopped into 1/4-inch pieces
- 2 tbsp Dash™ Salt-Free Original Seasoning Blend
- 2 tbsp olive oil

Directions
- Peel and grate the potatoes. Squeeze out any excess liquid from the grated potatoes and toss them to loosen.
- In a bowl, combine the grated potatoes, scallions, and Dash™ Salt-Free Original Seasoning.
- Heat a sauté pan over medium heat and add 1 tbsp of olive oil until it shimmers.
- Using a spoon, place small portions of the potato mixture into the pan and press them into 3-inch round patties.
- Cook the patties on one side over even heat until they are nicely browned, about 4 minutes.
- Carefully turn the patties over, drizzle in an additional 1 tbsp of olive oil, and cook for another 3 to 4 minutes until golden brown and crisp on both sides.
Tips
- Chef’s Tip -For extra crispiness, make sure to spread the potato mixture in a thin, even layer in the pan. Avoid overcrowding, and press down gently with a spatula to help the pancakes hold their shape and cook evenly.
