Pesto Gnocchi Sundried Tomatoes

Ingredients

  • 1 lb gnocchi, store bought
  • 2 tbsp olive oil
  • ¼ cup sundried tomatoes, chopped
  • 2 tsp Dash® Pasta Blend Garlic Pesto Seasoning
  • ¼ cup reserved pasta water
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Directions

  1. Gnocchi: Bring a large pot of water to a boil. Cook gnocchi according to package instructions (usually 2-3 minutes, or until they float to the surface). Reserve ¼ cup of water. Drain and set aside.
  2. Sauce: In a large skillet, heat olive oil over medium heat. Add sundried tomatoes and sauté for 1-2 minutes until fragrant.
  3. Lower the heat and stir in Dash® Pasta Blend Garlic Pesto Seasoning. Add the cooked gnocchi to the skillet, tossing gently to coat.
  4. Stir in reserved pasta water until well-blended.
  5. Serve: Plate the gnocchi and top with freshly grated Parmesan cheese, if desired. Garnish with fresh basil for a pop of color and added flavor.

Tips
