- 1 rack Coleman Natural® St. Louis Style Pork Ribs, cut into 4 sections
- 2 tbsp olive oil
- 1 small yellow onion, finely diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1/4 cup Dash™ Original Seasoning Blend
- 1 tbsp balsamic vinegar
- 2 cups low-sodium beef broth
- 1 tbsp brown sugar
- Chopped chives, for garnish
- Mashed potatoes, for serving
Directions
- Season Coleman Natural® St. Louis Style Pork Ribs with half the Dash™ Original Seasoning Blend. Set Instant Pot to sauté, heat olive oil, and sear ribs in batches until browned on all sides.
- Remove ribs, add onion and garlic, and cook for 2 minutes until softened. Stir in tomato paste and remaining Dash™ Original Seasoning Blend.
- Deglaze with balsamic vinegar, scraping the bottom, then add beef broth and brown sugar. Return ribs to pot.
- Seal lid and pressure cook on high for 45 minutes. Let pressure naturally release for 10 minutes, then quick release.
- Remove ribs, switch to sauté, and simmer sauce 10–15 minutes until thickened. Serve ribs over mashed potatoes, spoon sauce on top, and garnish with chives.
