Sweet Potato Chicken Skillet

Ingredients
- 3 tbsp olive oil
- 2 tbsp Caribbean Citrus Seasoning Blend
- 4 4-oz. boneless, skinless chicken breasts
- 2 medium sweet potatoes, cut into 8 wedges each
Directions
- Heat a cast-iron skillet to medium heat.
- Add 1 1/2 tablespoons olive oil.
- Toss in sweet potatoes and brown on all sides for 1 minute.
- Remove to a plate. Add remaining olive oil and brown chicken for 2 minutes on each side.
- Return sweet potatoes to pan and sprinkle all with Caribbean Citrus Seasoning Blend.
- Cook 3 minutes, toss and serve.
