  • 1 medium red onion, cut into 16 1-inch square wedges
  • 2 medium green peppers, seeded, cut into 1-inch squares
  • 2 cup cooked brown rice
  • 16 button mushrooms
  • 1/2 cup Lime Garlic Marinade
  • 1/4 cup Lime Garlic Marinade
  • 1 lb salmon fillets, cut into


  1. Marinate salmon in 1/2 cup of the Lime Garlic Marinade for at least 10 minutes.
  2. Preheat grill to medium-high heat.
  3. Remove salmon from marinade, discarding marinade.
  4. Thread each 10- to 12-inch skewer with four pieces each of salmon, onion, mushrooms and peppers.
  5. Cook kabobs 4 to 5 minutes per side or until salmon is cooked through.
  6. Brush kabobs with the remaining 1/4 cup of Lime Garlic Marinade while cooking.
  7. Serve over hot cooked brown rice.
