Salmon Vegetable Kabobs
Marinate salmon and vegetables in Dash™ Lime Garlic Marinade and grill this summertime treat to perfection. Serve atop brown rice to complete this light and healthy meal.

Ingredients
- 1 medium red onion, cut into 16 1-inch square wedges
- 2 medium green peppers, seeded, cut into 1-inch squares
- 2 cup cooked brown rice
- 16 button mushrooms
- 1/2 cup Lime Garlic Marinade
- 1/4 cup Lime Garlic Marinade
- 1 lb salmon fillets, cut into
Directions
- Marinate salmon in 1/2 cup of the Lime Garlic Marinade for at least 10 minutes.
- Preheat grill to medium-high heat.
- Remove salmon from marinade, discarding marinade.
- Thread each 10- to 12-inch skewer with four pieces each of salmon, onion, mushrooms and peppers.
- Cook kabobs 4 to 5 minutes per side or until salmon is cooked through.
- Brush kabobs with the remaining 1/4 cup of Lime Garlic Marinade while cooking.
- Serve over hot cooked brown rice.
