  • 1 cup coarsely chopped onion
  • 1/2 cup chopped parsley
  • 1/4 cup butter
  • 1/2 cup whipping cream
  • 3 beaten eggs
  • 1 tbsp Italian Medley Seasoning Blend
  • 1/2 cup grated Parmesan cheese
  • 4 cup grated zucchini


  1. Wash and trim zucchini, grate, place in colander and drain over sink for 1/2 hour.
  2. Preheat oven to 375 degrees.
  3. Add butter to a skillet and melt over medium heat.
  4. Add onion, parsley and zucchini and sauté until tender, about 10 minutes.
  5. Stir in Italian Medley Seasoning Blend and cool mixture slightly.
  6. In a large bowl, beat eggs; add cheese and cream.
  7. Gently fold in zucchini mixture evenly in pan.
  8. Cook in the preheated oven for 18 to 20 minutes.
  9. Let stand for 10 minutes before serving.
