  • 1 tbsp Chicken Grilling Blend
  • 2 tsp Extra Spicy Seasoning Blend
  • 1 diced red pepper
  • 1/2 lb sliced mushrooms
  • 1 1/2 cup low-sodium chicken broth
  • 4 6-oz. bone-in, skinless chicken breasts
  • 4 minced garlic cloves
  • 1 cup long-grain rice
  • 1 tbsp vegetable oil
  • 1 medium yellow onion, peeled and sliced


  1. Mix together Chicken Grilling Blend and Extra Spicy Seasoning Blend.
  2. Sprinkle over chicken.
  3. Heat oil in a large skillet.
  4. Brown chicken for 3 to 4 minutes per side.
  5. Remove chicken after browning.
  6. Add onion slices, minced garlic and rice. Sauté 1 minute.
  7. Place rice mixture in 2-quart casserole and top with mushrooms and red pepper.
  8. Place chicken pieces on top and pour in broth.
  9. Cover with foil and bake in a 350-degree oven for 50 to 60 minutes or until chicken and rice are cooked.
