Tequila-Roasted Chicken Legs With Fiesta Lime Recipe
- Do not be intimidated by the tequila; just a little is used to coat the chicken while cooking. Double the recipe to have enough of these flavorful crowd-pleasing chicken legs to share at the company potluck.

Ingredients
- 10 to 12 skinless chicken legs, rinsed and dried
- 4 tbsp chopped fresh scallion green, chives, parsley or cilantro
- 2 tbsp olive oil
- 4 small plum tomatoes, cut into ½-inch slices
- 1 1/2 tbsp Fiesta Lime Seasoning Blend
- 2 cup low-sodium chicken broth
- 1 medium white onion, cut into ¼-inch slices
- 3 jalapeo peppers, cut into ¼-inch slices
- 1/2 cup tequila
- 2 tsp fresh lime juice
Directions
- Preheat oven to 350 degrees.

Mix together all the ingredients except ½ tablespoon Fiesta Lime Seasoning Blend in a large bowl.
- Place into roasting pan and cook for about 30 minutes or until the chicken has clear-running juices.
- Remove from oven and serve family style in the roasting pan or casserole.
