  • 10 to 12 skinless chicken legs, rinsed and dried
  • 4 tbsp chopped fresh scallion green, chives, parsley or cilantro
  • 2 tbsp olive oil
  • 4 small plum tomatoes, cut into ½-inch slices
  • 1 1/2 tbsp Fiesta Lime Seasoning Blend
  • 2 cup low-sodium chicken broth
  • 1 medium white onion, cut into ¼-inch slices
  • 3 jalapeo peppers, cut into ¼-inch slices
  • 1/2 cup tequila
  • 2 tsp fresh lime juice


  1. Preheat oven to 350 degrees.
  2. Mix together all the ingredients except ½ tablespoon Fiesta Lime Seasoning Blend in a large bowl.

  3. Place into roasting pan and cook for about 30 minutes or until the chicken has clear-running juices.
  4. Remove from oven and serve family style in the roasting pan or casserole.
  5. Finish by sprinkling with the remainder of the Fiesta Lime Seasoning Blend.
