Ingredients

 

For the Taco Bowl:

  • 2 cups cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or thawed if frozen)
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely chopped
  • 1 avocado, sliced
  • Fresh cilantro, chopped 
  • Lime wedges for serving

 

For the Dressing:

Directions

  1. In a bowl, toss the shrimp with olive oil and Dash Salt Free Original Blend until evenly coated. Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat and set aside.
  2. Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, and Dash Salt Free Original Blend.
  3. In 4 serving bowls, divide the cooked brown rice, black beans, corn kernels, cherry tomatoes, and red onion.
  4. Top each bowl with avocado slices and cooked shrimp.
  5. Drizzle the lime dressing over each bowl. Garnish with fresh cilantro. Serve with lime wedges on the side and Enjoy!
