Ingredients

  • 3 avocados, diced
  • 3 ears of corn, grilled and cut off the cob
  • 1 lb. cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 Tbsp extra virgin olive oil
  • 2 to 3 Tbsp lime juice, from 1 to 2 limes
  • 1 Tbsp.Dash Salt Free Fiesta Lime Seasoning Blend 
  • 1/8 tsp black pepper

Directions

  1. In a large bowl, combine the diced avocados, corn kernels, cherry tomatoes, red onion, and cilantro.
  2. Drizzle the top with 2 Tbsp extra virgin olive oil, 2-3 Tbsp lime juice, Dash Salt Fiesta Lime and 1/8 tsp black pepper. Toss the salad gently just until combined and serve.
  3. Taste and adjust seasoning if needed. Serve immediately as a side dish or a light lunch. Enjoy!
