Ingredients

  • 1/2 cup chopped green bell pepper
  • 1 1/2 tsp Extra Spicy Seasoning Blend
  • 2 cup egg substitute
  • 1/4 cup low-fat sour cream
  • 1/2 cup chopped green onion
  • 1/4 cup chopped fresh cilantro
  • 1 cup chopped fresh tomatoes
  • 1/2 cup shredded low-fat or fat-free cheddar cheese
  • 2 tbsp Molly McButter® Roasted Garlic Sprinkles

Directions

  1. Combine egg substitute, sour cream, Roasted Garlic Sprinkles and Extra Spicy Seasoning Blend in medium bowl; mix well.
  2. Spray large skillet with vegetable cooking spray.
  3. Sauté green onion and pepper until tender; reduce heat to medium.
  4. Add egg mixture.
  5. Cook by lifting edges with spatula so uncooked eggs can flow to the bottom; do not stir.
  6. Sprinkle with shredded cheese.
  7. Cut into wedges.
  8. Garnish with chopped fresh tomatoes and chopped fresh cilantro before serving.
