Santa Fe Eggs
Southwest-style breakfast is easy to achieve with the help of Extra Spicy Seasoning Blend. Serve the seasoned eggs with your favorite toppings, such as guacamole, homemade salsa or cilantro, to add an extra Southwest kick.

Ingredients
1/2 cup chopped green bell pepper 1 1/2 tsp Extra Spicy Seasoning Blend 2 cup egg substitute 1/4 cup low-fat sour cream 1/2 cup chopped green onion 1/4 cup chopped fresh cilantro 1 cup chopped fresh tomatoes 1/2 cup shredded low-fat or fat-free cheddar cheese 2 tbsp Molly McButter® Roasted Garlic Sprinkles
Directions
Combine egg substitute, sour cream, Roasted Garlic Sprinkles and Extra Spicy Seasoning Blend in medium bowl; mix well.
Spray large skillet with vegetable cooking spray.
Sauté green onion and pepper until tender; reduce heat to medium.
Add egg mixture.
Cook by lifting edges with spatula so uncooked eggs can flow to the bottom; do not stir.
Sprinkle with shredded cheese.
Cut into wedges.
Garnish with chopped fresh tomatoes and chopped fresh cilantro before serving.
