Ingredients

  • 8 oz whole wheat pasta
  • 2 cups assorted vegetables, cut into bite-sized pieces (e.g., bell peppers, zucchini, cherry tomatoes, broccoli)
  • 2 Tbsp. olive oil
  • 1 Tbsp. Dash Onion and Herb
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh basil leaves, chopped, for garnish (optional)

Directions

  1. Preheat your oven to 400°F. In a large bowl, toss the assorted vegetables with olive oil, Dash Onion and Herb and minced garlic until evenly coated.
  2. Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through cooking.
  3. While the vegetables are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large serving bowl, toss the cooked pasta with the roasted vegetables.
  5. Serve the Roasted Veggie Pasta hot, garnished with grated Parmesan cheese and chopped fresh basil leaves. Enjoy!
