  • 2 tbsp olive oil
  • 1 1/2 lb small new red potatoes
  • 1/3 cup chopped sun-dried tomatoes, drained
  • 3 tbsp balsamic vinegar
  • 3 tbsp chopped green onions
  • 1 tbsp Table Blend


  1. Cook potatoes in large pot of boiling water 12 to 15 minutes until tender when pierced with a fork.
  2. Drain and rinse potatoes in cold running water.
  3. Meanwhile, combine sun-dried tomatoes, vinegar, olive oil and Table Blend in small bowl; mix well.
  4. Combine potatoes and green onions in large bowl.
  5. Add dressing and toss to coat.
  6. Refrigerate until ready to serve.
