Grilled Tuscan Chicken Sandwich Recipe
- Pulling off dinner after a long day can be a challenge, but these boneless chicken breasts cook in about 15 minutes. Or, flavor last night's chicken dinner with Tomato Basil Garlic Seasoning Blend and add sliced red pepper for a super supper in minutes.

Ingredients
- 1 tbsp olive oil
- 4 large sourdough rolls
- 4 large romaine lettuce leaves, washed and patted dry, torn in half widthways
- 3 tbsp Tomato Basil Garlic Seasoning Blend
- 1 lb boneless, skinless chicken breast halves
- 1 large red pepper, thickly sliced
- 1/4 cup sliced ripe olives
- Cooking spray
Directions
- Spray cooking spray on each side of chicken breasts and sprinkle with 2 tablespoons Tomato Basil Garlic Seasoning Blend.
- Grill chicken and peppers for 5 minutes on preheated grill.
- Turn and grill for another 5 minutes, or until chicken juices run clear when pierced.
- Remove and cool slightly.
- In a bowl, combine sliced olives, olive oil and remaining 1 tablespoon Tomato Basil Garlic Seasoning Blend.
- Cut rolls in half and spread olive mixture on each side of each roll.
- Layer lettuce leaf half, chicken breast, red pepper slice and other half of lettuce leaf on each bottom roll half, and place other half of roll on top.
- Serve immediately.
