Ground Turkey Taco Lettuce Cups Recipe

Ingredients
For the Ground Turkey Filling:
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Dash Salt Free Garlic and Herb Seasoning Blend
- 1/2 cup low-sodium chicken broth or water
- 1 tbsp tomato paste (no salt added)
For the Lettuce Cups:
- 1 head of butter lettuce or romaine lettuce, leaves separated and washed
- 1 cup cherry tomatoes, quartered
- 1/2 cup red onion, finely chopped
- Shredded cheese
- 1 avocado, diced
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for garnish)
Directions
- Cook the Ground Turkey: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, and sauté for about 3-4 minutes, until the onion is translucent. Add the ground turkey to the skillet, breaking it up with a spoon, and cook until it is no longer pink, about 5-7 minutes.
- Add in Dash Salt Free Garlic and Herb Seasoning Blend. Add the tomato paste and low-sodium chicken broth or water, mixing well to combine. Simmer the mixture for about 5 minutes, until the liquid has reduced and the flavors are well incorporated. Remove from heat.
- Assemble the Lettuce Cups: Lay out the lettuce leaves on a large serving platter or individual plates. Spoon the ground turkey mixture into each lettuce leaf. Top with quartered cherry tomatoes, finely chopped red onion, cheese and diced avocado.
- Garnish with fresh cilantro and lime wedges. Enjoy!
