Ingredients

For the Ground Turkey Filling:

 

For the Lettuce Cups:

  • 1 head of butter lettuce or romaine lettuce, leaves separated and washed
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup red onion, finely chopped
  • Shredded cheese 
  • 1 avocado, diced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for garnish)

Directions

  1. Cook the Ground Turkey: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, and sauté for about 3-4 minutes, until the onion is translucent. Add the ground turkey to the skillet, breaking it up with a spoon, and cook until it is no longer pink, about 5-7 minutes.
  2. Add in Dash Salt Free Garlic and Herb Seasoning Blend. Add the tomato paste and low-sodium chicken broth or water, mixing well to combine. Simmer the mixture for about 5 minutes, until the liquid has reduced and the flavors are well incorporated. Remove from heat.
  3. Assemble the Lettuce Cups: Lay out the lettuce leaves on a large serving platter or individual plates. Spoon the ground turkey mixture into each lettuce leaf. Top with quartered cherry tomatoes, finely chopped red onion, cheese and diced avocado.
  4. Garnish with fresh cilantro and lime wedges. Enjoy!
