Ingredients

For the Buffalo Chickpeas:

  • 1 can (15 oz) low-sodium chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tbsp Dash Extra Spicy Seasoning
  • 2 tbsp hot sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp unsalted butter or margarine, melted
  • 1 clove garlic, minced

 

For the Wrap:

  • 4 whole wheat tortillas
  • 1 cup shredded lettuce
  • 1 carrot, julienned or shredded
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled blue cheese (optional)

For the Dressing:

  • 1/2 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp Dash Extra Spicy Seasoning
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Directions

  1. Prepare the Buffalo Chickpeas: In a skillet, heat the olive oil over medium heat. Add the drained and rinsed chickpeas to the skillet and cook for about 5 minutes, stirring occasionally.
  2. In a small bowl, mix the hot sauce, apple cider vinegar, melted butter, minced garlic, and Dash Extra Spicy Seasoning.Pour the sauce mixture over the chickpeas in the skillet, stirring to coat them evenly.Cook for an additional 3-4 minutes, allowing the chickpeas to absorb the sauce. Remove from heat and set aside.
  3. Prepare the Dressing: In a small bowl, whisk together the plain Greek yogurt, lemon juice, Dash Extra Spicy Seasoning, minced garlic, and chopped dill until well combined. Adjust seasoning to taste.
  4. Warm the whole wheat tortillas in a dry skillet or microwave for a few seconds to make them more pliable. Lay each tortilla flat and spread a spoonful of the dressing in the center. Add a layer of shredded lettuce, julienned carrot, sliced cucumber, red onion, and cherry tomatoes.Top with a generous scoop of the buffalo chickpeas. Sprinkle with crumbled blue cheese if using.
  5. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Slice the wrap in half if desired and serve immediately. Enjoy!
