Honey Garlic Shrimp Cucumber Boats Recipe

Ingredients
For the Shrimp:
- 1 tbsp olive oil
- 2 tbsp honey
- 1 tbsp Dash Salt Free Garlic and Herb Seasoning Blend
- 1 tbsp lemon juice
- 1 lb shrimp, peeled and deveined
For the Cucumber Boats:
- 4 large cucumbers
- 2 cups cooked rice
- 1 Tbsp mayonnaise
- 1 Tbsp sriracha
- 1/4 cup fresh cilantro, chopped
Directions
- Prepare the Shrimp: In a medium bowl, mix the olive oil, honey, Dash Salt Free Garlic and Herb Seasoning Blend and lemon juice. Add the shrimp to the bowl, tossing to coat evenly. Let marinate for 15 minutes.
- Heat a large non-stick skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for about 3-4 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and set aside.
- Prepare the Cucumber Boats: Wash the cucumbers and cut them in half lengthwise.Use a spoon to scoop out the seeds, creating a boat-like shape.
- Fill each cucumber boat with a layer of rice and then with cooked shrimp. Drizzle with mayo, sriracha and fresh cilantro. Enjoy!
