Chickpea Salad Sandwich Recipe

Ingredients
For the Chickpea Salad:
- 1 can (15 oz) low-sodium chickpeas, drained and rinsed
- 1/4 cup plain Greek yogurt
- 1 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp Dash Salt Free Original Blend
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup dill pickles, finely chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
For the Sandwich:
- 8 slices whole grain bread
- Lettuce leaves
- Tomato slices
- Avocado slices
Directions
- In a medium bowl, mash the chickpeas with a fork or potato masher until they are mostly smooth with a few chunks remaining. Add the plain Greek yogurt, mayonnaise, Dijon mustard, lemon juice, and Dash Salt Free Original Blend. Mix until well combined.
- Stir in the finely chopped celery, red onion, dill pickles, fresh parsley and fresh dill. Mix well until all ingredients are evenly distributed.
- Assemble the Sandwich: Lay out the whole grain bread slices. Spread a generous amount of the chickpea salad onto four of the bread slices. Top with lettuce leaves, tomato slices, and avocado slices. Place the remaining bread slices on top to complete the sandwiches.
- Cut the sandwiches in half and serve immediately. Enjoy!
