Roasted Veggie Pasta Recipe

Ingredients
- 8 oz whole wheat pasta
- 2 cups assorted vegetables, cut into bite-sized pieces (e.g., bell peppers, zucchini, cherry tomatoes, broccoli)
- 2 Tbsp. olive oil
- 1 Tbsp. Dash Onion and Herb
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese (optional)
- Fresh basil leaves, chopped, for garnish (optional)
Directions
- Preheat your oven to 400°F. In a large bowl, toss the assorted vegetables with olive oil, Dash Onion and Herb and minced garlic until evenly coated.
- Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through cooking.
- While the vegetables are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large serving bowl, toss the cooked pasta with the roasted vegetables.
- Serve the Roasted Veggie Pasta hot, garnished with grated Parmesan cheese and chopped fresh basil leaves. Enjoy!
