White Bean Salad Recipe
- Choose ripe cherry tomatoes and just-picked peppers for this special summer salad. Flavor the vegetables with Extra Spicy Seasoning Blend, add white cannellini beans and you're in for a delicious, healthy summer salad.

Ingredients
- 2 tbsp divided olive oil
- 1 tbsp Extra Spicy Seasoning Blend
- 15 oz can cannellini (white) beans
- 1/4 cup minced Italian parsley
- 1 pt cherry tomatoes
- 1 medium yellow pepper, seeded
Directions
- Preheat oven to 375 degrees.
- Drain and rinse the cannellini beans.
- Spray roasting pan with vegetable oil spray.
- Cut peppers into thin strips and combine with tomatoes, Extra Spicy Seasoning Blend and 1 tablespoon olive oil.
- Roast vegetables for 25 minutes, remove from heat and place in bowl.
- Add beans and remaining olive oil.
- Toss and serve at room temperature.
