Ingredients

  • 1 tbsp olive oil
  • 1 cup hot water
  • 1/2 cup chopped red pepper
  • 1 1/4 tsp Lemon Pepper Seasoning Blend
  • 3 tsp red wine vinegar
  • 1/2 cup chopped onion or scallion
  • 1/2 cup long-grain rice
  • 1 medium zucchini, diced
  • 1/4 cup dry white wine
  • 1/2 cup frozen peas

Directions

  1. Heat oil in medium skillet.
  2. Add rice, onion and red pepper and cook until rice is golden, stirring constantly.
  3. Gradually stir in water, wine, 2 teaspoons vinegar and 1 teaspoon Lemon Pepper Seasoning Blend.
  4. Bring to a boil; reduce heat.
  5. Add peas and zucchini; simmer, covered, for 20 minutes or until rice and vegetables are tender.
  6. Sprinkle with remaining vinegar and Lemon Pepper Seasoning Blend.
  7. Fluff rice with fork before serving.
