Vegetable Rice Pilaf Recipe
This side dish is sure to please and pairs nicely with Dash™-seasoned chicken breasts. The diced zucchini and red pepper are great additions to this mouthwatering pilaf.

Ingredients
- 1 tbsp olive oil
- 1 cup hot water
- 1/2 cup chopped red pepper
- 1 1/4 tsp Lemon Pepper Seasoning Blend
- 3 tsp red wine vinegar
- 1/2 cup chopped onion or scallion
- 1/2 cup long-grain rice
- 1 medium zucchini, diced
- 1/4 cup dry white wine
- 1/2 cup frozen peas
Directions
- Heat oil in medium skillet.
- Add rice, onion and red pepper and cook until rice is golden, stirring constantly.
- Gradually stir in water, wine, 2 teaspoons vinegar and 1 teaspoon Lemon Pepper Seasoning Blend.
- Bring to a boil; reduce heat.
- Add peas and zucchini; simmer, covered, for 20 minutes or until rice and vegetables are tender.
- Sprinkle with remaining vinegar and Lemon Pepper Seasoning Blend.
- Fluff rice with fork before serving.
