Ingredients

  • 1 tbsp olive oil
  • 1 red pepper, roasted, peeled and diced
  • 2 yellow peppers, roasted, peeled and diced
  • 2 tbsp low-sodium chicken broth
  • 2 medium tomatoes, seeded and diced
  • 12 oz whole-grain penne pasta
  • 1 large cucumber, seeded and diced
  • 3 tbsp lemon juice
  • 3 tbsp Garlic & Herb Seasoning Blend
  • 1 pint cherry tomatoes (yellow if possible), halved

Directions

  1. Cook pasta according to package directions.
  2. Set aside.
  3. Combine olive oil, 2 tablespoons Garlic & Herb Seasoning Blend, lemon juice and broth in a large bowl.
  4. Add prepared vegetables and pasta, toss well and chill.
  5. When ready to serve, brush salmon fillets with a little olive oil and sprinkle with 1 tablespoon Garlic & Herb Seasoning Blend.
  6. Grill fillets 3 to 4 minutes per side on medium heat.
  7. Serve hot with pasta salad.
