Pasta Salad With Tomatoes and Grilled Salmon Recipe
- A chilled pasta salad with colorful roasted peppers, fresh yellow tomatoes and diced cucumber, all flavored with Garlic & Herb Seasoning Blend. Brush salmon with healthy olive oil, grill and serve hot alongside pasta salad.

Ingredients
- 1 tbsp olive oil
- 1 red pepper, roasted, peeled and diced
- 2 yellow peppers, roasted, peeled and diced
- 2 tbsp low-sodium chicken broth
- 2 medium tomatoes, seeded and diced
- 12 oz whole-grain penne pasta
- 1 large cucumber, seeded and diced
- 3 tbsp lemon juice
- 3 tbsp Garlic & Herb Seasoning Blend
- 1 pint cherry tomatoes (yellow if possible), halved
Directions
- Cook pasta according to package directions.
- Set aside.
- Combine olive oil, 2 tablespoons Garlic & Herb Seasoning Blend, lemon juice and broth in a large bowl.
- Add prepared vegetables and pasta, toss well and chill.
- When ready to serve, brush salmon fillets with a little olive oil and sprinkle with 1 tablespoon Garlic & Herb Seasoning Blend.
- Grill fillets 3 to 4 minutes per side on medium heat.
- Serve hot with pasta salad.
