Orange Vinaigrette Grilled Chicken Salad Recipe
- Hearty enough for a full meal, this healthy salad is one to add to your lunchtime routine. Lemon pepper chicken breasts, mandarin oranges, fresh mushrooms and romaine lettuce make up this citrus-infused salad.

Ingredients
- 1 bunch torn romaine lettuce
- 1/2 cup chopped onion
- 1/2 cup sliced fresh mushrooms
- 1/4 cup Lemon Pepper Seasoning Blend
- 1/2 cup prepared fat-free red wine vinaigrette salad dressing
- 4 4-oz. boneless, skinless chicken breast halves
- 11 oz can mandarin oranges, drained
Directions
- Whisk together salad dressing and Lemon Pepper Seasoning Blend, setting aside 1/2 cup.
- Brush chicken with reserved dressing.
- Grill (turning and brushing occasionally) until done, about 10 to 12 minutes.
- Cut chicken into strips.
- Serve over lettuce with oranges, red onion and sliced mushrooms.
- Drizzle remaining dressing over salad.
