Lamb Chops With Garden Vegetables

Ingredients
- 4 3-oz. lamb chops, all visible fat removed
- 1 cup diced green pepper
- 2 cup sliced onions, lightly sprayed with nonstick cooking spray
- 2 medium tomatoes, sliced
- 2 cup Garlic Herb Marinade
- 2 tbsp Garlic & Herb Seasoning Blend
- 2 cup sliced zucchini
Directions
- Marinate lamb chops, green peppers, zucchini and tomatoes in 2 cups of Garlic Herb Marinade for 10 minutes.
- Remove lamb chops from marinade.
- Brown lamb chops in a skillet sprayed with nonstick cooking spray.
- Remove lamb chops from skillet and add onions to skillet.
- Cook onions for about 5 minutes, or until soft, then add seasoning blend and stir lightly.
- Transfer lamb chops and onions into a 2-quart casserole.
- Remove green peppers, zucchini and tomatoes from marinade.
- Discard remaining marinade.
- Spoon vegetables over lamb chops and onions.
- Cover casserole and bake for 1 hour in a preheated 350-degree oven, stirring occasionally.
