Chicken and Vegetable Rice Casserole Recipe

Ingredients
- 1 tbsp Chicken Grilling Blend
- 2 tsp Extra Spicy Seasoning Blend
- 1 diced red pepper
- 1/2 lb sliced mushrooms
- 1 1/2 cup low-sodium chicken broth
- 4 6-oz. bone-in, skinless chicken breasts
- 4 minced garlic cloves
- 1 cup long-grain rice
- 1 tbsp vegetable oil
- 1 medium yellow onion, peeled and sliced
Directions
- Mix together Chicken Grilling Blend and Extra Spicy Seasoning Blend.
- Sprinkle over chicken.
- Heat oil in a large skillet.
- Brown chicken for 3 to 4 minutes per side.
- Remove chicken after browning.
- Add onion slices, minced garlic and rice. Sauté 1 minute.
- Place rice mixture in 2-quart casserole and top with mushrooms and red pepper.
- Place chicken pieces on top and pour in broth.
- Cover with foil and bake in a 350-degree oven for 50 to 60 minutes or until chicken and rice are cooked.
