Caribbean Chicken Skewers Recipe

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 Tbsp. olive oil
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden skewers, soaked in water for 30 minutes
For the Marinade:
- Juice of 1 lime
- 2 Tbsp. olive oil
- 1 Tbsp. honey or maple syrup
- 1 Tbsp. Dash Salt Free Southwest Blend
Directions
- Prepare the Marinade: In a small bowl, whisk together the lime juice, olive oil, honey or maple syrup, and Dash Salt Free Southwest Blend. Place the chicken cubes in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken and toss to coat. Cover or seal and refrigerate for at least 30 minutes to 1 hour.
- Prepare the Skewers: Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers, alternating with chunks of red bell pepper, yellow bell pepper, and red onion.
- Grill the Skewers: Brush the grill grates with olive oil to prevent sticking. Place the skewers on the grill and cook for 5-6 minutes per side, or until the chicken is cooked through and has nice grill marks. Ensure the internal temperature of the chicken reaches 165°F.
- Remove the skewers from the grill and let them rest for a few minutes. Serve the Caribbean Chicken Skewers hot, garnished with additional fresh lime wedges. Enjoy!
