Tofu Power Bowl Recipe

Ingredients
For the Tofu:
- 1 block (14 oz) firm tofu, pressed and cubed
- 1 tbsp olive oil
- 1 tbsp Dash Extra Spicy Seasoning
- 1 tbsp lime juice
For the Bowl:
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup shredded carrots
- 1 avocado, sliced
- 1 cup baby spinach or mixed greens
- 1/4 cup fresh cilantro, chopped
Spicy Greek Yogurt Dressing:
- 1/4 cup plain Greek yogurt
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp. Dash Extra Spicy Seasoning
- 1 tsp honey or agave syrup (optional)
Directions
- Prepare the Tofu: In a bowl, mix the olive oil, Dash Extra Spicy Seasoning and lime juice. Add the tofu cubes to the bowl, tossing to coat evenly. Let marinate for at least 15 minutes.
- Heat a large non-stick skillet over medium-high heat. Add the marinated tofu cubes to the skillet and cook for about 8-10 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides. Remove from heat.
- While the tofu is cooking, in a small bowl, whisk together the plain Greek yogurt, lime juice, olive oil, Dash Extra Spicy Seasoning and honey or agave syrup (if using) until well combined.
- Divide the cooked quinoa among four bowls. Arrange the baby spinach, diced cucumber, shredded carrots, sliced avocado, and cherry tomatoes around the quinoa in each bowl. Top with the cooked tofu cubes.
- Drizzle the prepared dressing over the bowls, garnish with chopped fresh cilantro and Enjoy!
