Fish Taco Bowl Recipe

Ingredients
For the Fish:
- 1 lb white fish filets (such as cod, tilapia, or haddock)
- 1 tbsp olive oil
- 1 tbsp Dash Taco Seasoning
- 1 lime, juiced
- 1 clove garlic, minced
For the Bowl:
- 2 cups cooked brown rice
- 1 cup black beans, drained and rinsed (no salt added)
- 1 cup corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Lime wedges for garnish
For the Dressing:
- 1/2 cup plain Greek yogurt
- 1 tbsp lime juice
- 1 tbsp Dash Taco Seasoning
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp honey or agave syrup (optional)
Directions
- . Prepare the Fish: Preheat the oven to 400°F and line a baking sheet with parchment paper.In a small bowl, mix the olive oil, Dash Taco Seasoning, lime juice, and minced garlic. Place the fish filets on the prepared baking sheet and brush the seasoning mixture over the fish. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork. Once cooked, break the fish into bite-sized pieces.
- Prepare the Dressing: In a small bowl, whisk together the plain Greek yogurt, lime juice, Dash Taco Seasoning, olive oil, minced garlic, and honey or agave syrup (if using) until well combined. Adjust seasoning to taste.
- Divide the cooked rice among four bowls. Top each bowl with black beans, corn, cherry tomatoes, red onion, diced avocado, and pieces of the seasoned fish. Drizzle the yogurt dressing over the top.
- Garnish with additional fresh cilantro and lime wedges. Enjoy!
